If there's one recipe that feels fancy without actually trying, it's this Avocado Egg Salad!
I'll be honest — I'm still not entirely sure whether it qualifies as a typical “recipe” here, since it's really just bringing a few good ingredients together. But then again, some of the best things in life are simple, aren't they?
This Avocado Egg Salad is creamy, satisfying and comes together in literally minutes. No cooking, no fuss — just a handful of simple ingredients that somehow manage to taste like something you'd order at a fancy café brunch. A squeeze of lemon, a little seasoning, some fresh herbs — and you have something that looks gorgeous, tastes incredible and is actually good for you!
It works beautifully as a sandwich filling, a toast topper, or a wrap — or honestly, just eaten straight from the bowl with a spoon (that's exactly how I had it!), along with some homemade sourdough croutons.

Avocado Egg Salad
Ingredients
- 1 large Avocado (cubed)
- 2 Hard boiled Eggs (cubed)
- 1-2 tbsp Mayonnaise
- 1/2 -1 tsp Mustard (I used dijon mustard)
- 1 tbsp Chopped walnuts
- 1 tsp lemon juice
- 1/2 tsp Pepper powder
- 1 tbsp Chopped coriander leaves
- Salt
Instructions
- Toss the cubed avocado in lemon juice. Add the rest of the ingredients and mix well.
- Make sure you mix it gently, so that the egg yolks are not crumbled.
- You can have it on it's own or top it on a toasted bread.
- I topped the salad with some chilli crisp as well.
