Gingerbread Cake

December is here! That means, Christmas is also almost here… Have you started your Cake & Wine preps? As usual, I've soaked the fruits for more than a year and am planning to start my Fruit Cake baking marathon next week. Like always, I wanted to share with you a cake recipe, which is apt for this season. I almost zeroed in on a Coconut Rum Raisin Cake with Rum glaze. It sounded and looked yum! But it has some ingredients which is not easily available everywhere.

So, I searched n searched and landed on this one. This is a Gingerbread Pound cake recipe. Btw, if you havent tried Gingerbread before and you are a bit hesitant, let me tell you this. This cake doesn't have a bitter taste or a bad ginger aftertaste. This is a spiced pound cake, more like a cinnamon pound cake, with rich buttery taste and fine moist crumbs. The taste of ginger and spices is very subtle. It's very good to have with your morning or evening tea and it is also a good Christmas gift :)

  1. Tried this Maria…came out good. The texture was soft. I used 1 tbsp of ginger powder but it was the cinnamon and nutmeg that had the prominence in aroma and flavor. Also I felt that 3/4tsp salt made it a tad bit too salty. Any suggestions to get a stronger ginger flavour ? My family enjoyed it with whipped cream…thanks for the recipe

      Thanks for trying this cake. Nice to know that it came out well for you. Yeah this taste is more like a spiced pound cake. may be next time you can use a combination of fresh ginger and ginger powder, to get more ginger flavour. The original recipe called for 1 tsp salt and I reduced it to 3/4 :) However, if you felt it was a bit salty, may be you can use 1/2 tsp next time.

    Always a fan of your recipies, cakes look yummy
    Just a suggestion can you please post a carrot cake recipe, maybe an easier version (cooker or microwave option), not everyone has an oven and a microwave option will suit us.
