Tell me something… what's your take on weekend cooking? Are you the kind who just waits for the weekend to happen to close the kitchen doors OR are you the kind whose kitchen comes alive only during weekends OR are you somewhere in the middle like a semi-open kitchen plan, not completely closed or fully open.
If you ask me, I keep changing between the above three categories depending on, well… depending on many things. Right now I'm in the third category, but…
Irrespective of the category, my one-and-only preference for weekend cooking is that it must be relaxed and less time consuming. I guess most people don’t want to spend much time in the kitchen during weekend, unless you are really in the mood to experiment!
This is what I call a perfect recipe for the weekend.
It takes minimum effort, makes use of leftovers and the end result will make your weekend special ;) It's almost like a no-fail recipe, look at the ingredients: bread, egg, milk and cheese… hardly any chance for that combo to fail. Add some veggies (to give you that healthy feeling) and some bacon or sausage or chicken or meat (for your weekend indulgence) and you are good to go. This recipe is very versatile, you can add your fav ingredients, just like Pizza toppings.
I made this on a Friday for our lunch and we enjoyed it straight from the pan, while watching a good movie.

Heat oil in a wide pan and add chopped onion. Cook till it becomes golden brown. Add crushed garlic. Cook for 2-3 mins…

Add capsicum and tomato. Cook till it becomes soft, but still hold it's shape…

Add spinach leaves and cook till it's wilted 2-3 mins. Season with salt & pepper. Remove from fire and let it cool for 15-20 mins…

Whisk together eggs and milk. Add chopped parsley, salt and 2 tbsp of grated cheese. Mix well. Pour this mixture over cubed bread slices. Make sure the bread cubes are coated well with the egg-milk mixture. Let it soak for 15 mins…

Add the cooked veggies to the bread-milk-egg mixture and gently mix everything. Grease a 7 inch, baking dish. Add the mixture to this…

Top it with the remaining grated cheese. Bake in the pre heated oven for 40-50 mins. Let the baked dish rest for 15-20 mins before serving…

Ingredients
- 7 slices Bread (cubed (I used regular white bread))
- 1 big Onion (chopped)
- 1 tsp Crushed garlic
- 1 small Capsicum (cubed)
- 1 medium Tomato (cubed)
- 2 cups Spinach (I used baby spinach)
- 2 cups Milk
- 2 Eggs
- 100 gms Cheese (grated, I used cheddar (measured before grating))
- 1 tbsp Chopped Parsley leaves
- Oil (I used Olive oil)
- Salt
Instructions
- Preheat oven at 180 C, 10 mins before baking.
