Rainbow Sandwich

I used to live on bread and Amul butter when I was a kid. I wasn't a big rice fan. My lunch box was mostly filled with bread. I never used to complain even if I was given bread 3-4 times a day. I love bread, period. The sad thing is… from being a staple, it has become an indulgence these days. With all the new studies about how bread is not good for your health, I feel guilty when I've it on a regular basis. I so miss the days when everything was good in the world, when people used to enjoy food the way it's supposed to be enjoyed without thinking whether it boosts their health or harms their health.

This is one of the Sandwiches we used to make regularly at home. Marykutty aunty, my Amma's elder sister is known for her Chutney Sandwiches. I still remember her making these sandwiches and packing it for our train journey when we return from her place in Trivandrum, during summer holidays. The moment we got inside the train, I would be nudging Amma to open my share of Sandwiches ;)  When I visited Marykutty anuty in December last year, she was in the middle of making these Sandwiches. Somehow seeing her doing that after all these years, filled my heart with warmth. The fact that some things remain the same irrespective of time, comforted me in a weird way.

Anyways, the  funny thing was she was complaining that she got only brown bread from the shop, instead of the white bread. I was a bit surprised… especially since these days people are giving up anything and everything white for brown. I told her the same and her answer was “athokke oro vesham kettalle ente koche, thinnumbol vayikku ruchi aayittu bhakshanam kazhikkanam” (those sort of things are just a fad my dear, you should eat tasty food). Coming to think of it, my Amma's side of the family follows that philosophy religiously. When I go home these days and start preaching about bad eating habits, my parents get irritated. For them even today, oil is synonymous with “Coconut oil”, so you got the pic right ;)? I wish I could be like that, but most of the time I'm so caught up in the so called modern healthy eating habits. But there are days when I cut loose and eat to my heart's content ;)

So coming to our Sandwich recipe… I've already posted a Chutney Sandwich recipe before. I made some addition to that to make it a Rainbow Sandwich. I got this idea after seeing Nisha's post here. The addition of tomato paste to the chutney sandwich, gives a wonderful twist to the regular sandwich. Instead of tomato paste, I've used Pizza sauce here. The wonderful spices in the pizza sauce adds more depth to this sandwich. Plus, if you arent a Pizza fan, it's one of the best ways to use this flavour loaded Pizza sauce.

Ingredients

  • 1 medium – large loaf Bread

For chutney

  • 1 cup Grated coconut
  • 3/4 cup Chopped coriander leaves
  • 2 tbsp Chopped mint leaves
  • 1 Green chilli (chopped)
  • 1 tbsp Lemon juice
  • Salt
  • 2-3 tbsp Water
  • 2 tbsp Butter (softened (I use Amul Butter))
  • Pizza sauce – 1 batch
  • 50 – 100 gms Butter (softened, optional (I used Amul butter))

Instructions

  • To make the chutney, grind together all the ingredients listed under “for chutney”, except butter. Make sure the chutney isnt too watery. Start grinding it by adding 1-2 tbsp of water and add more if required. It should have a smooth consistency. Add 2 tbsp of butter to the chutney and mix well. You can store this chutney in fridge for 2 days.
  • To make the sandwiches:
  • Spread an even layer of chutney on a buttered slice, top it with another buttered slice of bread. Spread an even layer of pizza sauce on that. Top the second slice (the one with pizza sauce topping) with another buttered slice of bread. Repeat the same procedure for the remaining slices.
  • You can remove the crust if you like. You can serve it immediately or store in refrigerator for a day. Wrap the sandwiches with a wet cloth and store it in fridge, so that it doesn't become dry.

Notes

If you want to cut down the butter, dont use butter on all the slices. Just add butter to the chutney and follow the rest of the recipe.
You can use any bread of your choice. You can also use 2 slices per sandwich instead of 3. Just put chutney on one side and pizza sauce on the other and sandwich it.
You can also use tomato ketchup instead of pizza sauce, though the pizza sauce adds more flavour.
If you are adding salted butter to chutney, be careful while adding extra salt to the chutney. You can adjust the qty of coriander and mint leaves to suit your taste.
I prefer Amul butter for this sandwich. If you cant get Amul, try another brand of salted butter.

    If you skip coconut and add fried gram (Putani dal) instead, the chutney stays for about a month in the freezer. If you plan to use it the next day remove from the freezer and keep it in the fridge. You can also add imli and garlic it adds a punch.

    I have one bone to pick with you though. ;) Do read up on coconut oil. It’s very healthy. One of the healthiest oils to include in your diet. And it’s gaining a huge fan following in the international cosmetic industry too. :)

      Thanks! hehe, I know coconut oil is healthy, but as I said I tend to sway a little after reading diff articles. However I’ve started using coconut oil more in my daily cooking. After all, it’s very difficult to keep away anything coconut from a Malayali :)

  6. Oh, this has been a fav snack for years. The only difference is that i prefer cheese instead of butter. Either ways, its YUMMMMMYYY!!!
