Mixed Fried Rice Recipe

Surprised by the heading?? These days the product life cycle is becoming very short. Within one month of releasing a new product you have its new version with advanced features. Relax friends, am not lecturing about Marketing am just trying to give you an intro about the new version of mixed fried rice I made. I should say my 2nd version of mixed fried rice has a different flavor and taste compared to the previous one. Its like having fried rice from two different restaurants :)

I think some people like a particular taste for fried rice, for example my 2 year old nephew. He prefers fried rice from a particular restaurant in Mumbai (where my bro & family lives) and he has fried rice from other places only if he is tooooooo hungry and there are no other options. I sometimes wonder how he is so selective at this young age :) , talk about present day kids! Anyways am a person who doesn't mind trying different styles/version/tastes of fried rice.

Usually when I make mixed fried rice, I feel like standing in the mix n match dress section of shopper's stop :) I dont have a fixed recipe for fried rice, I usually make it with the available ingredients. This time however I didnt mix n match, I followed my Mother in Law's recipe. Btw, this is one of her hit recipes.

Mixed Fried Rice 2.0

Ingredients

  • 2 cups Rice (I used Basmati Rice)
  • 2 tbsp Butter
  • 2-3 tbsp Lemon Juice
  • 3.75 cups Hot Water
  • Salt
  • 1/2 – 3/4 cup each Cooked chicken, prawns & beef
  • 2 Scrambled eggs
  • 1 small Carrot (chopped)
  • 1/4 cup Beans (chopped)
  • 1 small Onion (chopped)
  • 1 small Capsicum (cut into small cubes)
  • 1 tbsp Celery (chopped)
  • 1/2 tbsp Garlic crushed
  • 1/2 tbsp Ginger crushed
  • 2 tbsp Soya sauce
  • 2 tbsp Green chili sauce
  • 2 cubes Chicken tastemaker (soup cubes (optional))
  • 2 tbsp Butter

Instructions

  • Wash the rice & soak it in water for 25 mins. Drain the water completely. Heat 2 tbsp butter in a pan. Add rice & fry it for 5 minutes or till it starts cracking. Add lemon juice & salt & water. Cook till the rice is done.Once the rice is cooked spread it on a tray and let it cool.
  • Heat 2 tbsp of butter in a pan. Add onion, ginger & garlic. Once it becomes soft, add carrot, beans, capsicum & celery. once the veggies are cooked add the cooked chicken, prawns & beef. Add salt & chicken cubes. Saute well. Add soya sauce & green chili sauce. Combine well. Add rice & scrambled eggs. Mix together everything. Cover & cook for 3,4 minutes. Serve hot.

Notes

The quantity of ingredients(the amount of non veg & veggie ingredients) is a personal choice. You can vary it as per your taste.I used Basmati Rice. Chicken & beef were cooked with salt & pepper and prawns was cooked with salt & a pinch of turmeric. If chicken cubes are added, be careful while adding salt. You can also use any refined oil instead of butter.

    hey abt this recipe…can you tell me how you cooked the prawns? was it by boiling?

      You can cook the prawns by boiling them or stir fry them lightly..

    I made ur 1st version of MFR 2day morning.Its good but I really missed ginger-garlic in it. But now after seeing the MFR2, I know its going 2 b a hit.Tks 2 ur mama 4 her recipe & 2 her dear DIL 4 posting it.

  4. I love this recipe and have tried it on four different occasions. It has come out well each time. Once I even tried prawns instead of chicken and believe me it was amazing. My fried rice is a hit among friends now..thanks Maria

    I have been following ur recipes for the past few months, but its only this weekend that I could find time to try one recipe. I had tried this mixed fried rice and your paneer masala. Paneer masala was a hit. My husband loved it. Thanks very much for the recipe.

    The fried rice was ok. But its not the fault of the recipe. I think, I did something wrong. I doubt I didnt fry the rice enough. I fried for 8-10 minutes, but after preparation it didnt have that fried taste. I had drained the rice in a sieved vessel “arippa paathram”, but still there was some water content when I took it for frying.

    How do you dry up the rice? How do you know the rice is fried to the required level?

    Please help me with this, I want to make this fried rice again.

    • Hi Raji,

      Thanks for taking time to try out the recipes. Good to know that paneer masala came out well :)

      For the rice… after draining the rice, try to spread it on a tray or any other flat vessel/surface. Pat the rice with kitchen tissue, it helps to a great extend to dry the rice. About frying the rice… you need to fry till you start hearing the crackling sound of rice.

  9. hi maria….i hope u r fine..this is resmy from dubai. today i prepared mixed fried rice n chilli chicken…it came out very well..thanq so much…n maria i am having one doubt the rice became somewhat dark in color  after adding to the mix n i think it is due to soya sauce…i love adding soya sauce but how can i avoid that darkish color…thank u again   with love

      Yep, the rice becomes dark in colour because of soya sauce. May be you can use light soya sauce, I guess it helps in reducing the dark colour of the rice.

    i chanced upon your website when i googled for pathiri recipes… your recipes look interesting and i would like to try out a few…

    I am sure the above recipe for mixed fried rice tastes yummy… All the same, I thought I should share something with you… Fried rice actually tastes better with plain leftover rice from the previous day! I have been living in Hong Kong & Mainland China for the past 6 years…most of the cooking is done on high heat (stir-fry)… for fried rice, the meat is rarely pre-cooked.. the meat is chopped into very small cubes and stir-fried… and they just use plain peanut oil or lard.
