December is here! That means, Christmas is also almost here… Have you started your Cake & Wine preps? As usual, I’ve soaked the fruits for more than a year and am planning to start my Fruit Cake baking marathon next week. Like always, I wanted to share with you a cake recipe, which is apt for this season. I almost zeroed in on a Coconut Rum Raisin Cake with Rum glaze. It sounded and looked yum! But it has some ingredients which is not easily available everywhere.
So, I searched n searched and landed on this one. This is a Gingerbread Pound cake recipe. Btw, if you havent tried Gingerbread before and you are a bit hesitant, let me tell you this. This cake doesn’t have a bitter taste or a bad ginger aftertaste. This is a spiced pound cake, more like a cinnamon pound cake, with rich buttery taste and fine moist crumbs. The taste of ginger and spices is very subtle. It’s very good to have with your morning or evening tea and it is also a good Christmas gift :)
