Here is the recipe…
Add finely sliced onion to heated oil. When it becomes golden brown, add minced ginger & garlic. Cook for a few mins and add the masala powders and cook for a few mins…

When oil starts appearing, add the lemon juice and salt. Mix well and add the cooked veggies…

Add cooked rice to this and combine gently. Add chopped mint and coriander leaves and stir…

Ingredients
- 3 cups Cooked basmati rice
- 1 small Onion (finely sliced)
- 1 tsp Ginger and garlic (minced)
- 1/2 - 1 tsp Chilli powder
- 1 tsp Coriander powder
- 1/2 tsp Turmeric powder
- 1/2 tsp Garam masala
- 1/2 tsp Meat masala (refer notes)
- 1 tbsp Lemon juice
- 1 cup Cooked vegetables (I used carrot and beans)
- 1 tbsp Coriander and mint leaves (each, chopped)
- Salt
- Ghee / oil (I used sunflower oil)
Instructions
- Heat ghee/oil in a deep bottom pan. Add finely sliced onions. When it turns golden brown, add minced ginger and garlic. Cook for a few mins. Add the masala powders and cook till the oil appears. Add lemon juice and salt and mix it. Add cooked veggies and mix. Add cooked rice and combine gently. Garnish with the chopped coriander and mint leaves.
- You can also garnish with fried onions and cashews. Serve with raita, pickle and pappad.
Notes
Meat masala wasnt used in the original recipe, but I recommend using it. If you are making it for some special occasion, I recommend using ghee. You can also use white rice like sona masuri also to make this, but the flavour will be more with Basmati. I microwaved the chopped veggies with 1-2 tbsp of water for 3 mins. You can use any veggies of your choice. To make a non veg version, you can add cooked chicken/beef/mutton along with the veggies and continue the same procedure.

Dnt you feel 3 cups basmati rice is too much for 2 or 3 people ???

tried tis onee ,,, and it was excellent,,,my hubby was on an anti veg pulao mission ,, but i was the one who luvd veg pulao and i used to force him to eat and i failed most of the tym,, whn i made this pulao and kept in front of him he gave me an angry look , i said ” wait , jz try it’s frm “mariasmenu”, he frst opposed but the color the aroma and the look of the pulao was sooo tempting tat he said” if its frm mariasmenu i think i shud try it” at that moment i realized tat he trustd ur recipes than mine :P… and finally ended up changing his mind of hating veg pulaoss,,, phewwwww finally,, thnkzz mariaa :))))
