Healthy Carrot Dates Milkshake

Carrot and Date Milkshake, anyone?

Before we dive in, let me ask you something: are you a “drinks person”? Over the years of dining out with friends and family, I’ve noticed that most people love ordering sugary, chilled drinks to go with their food.

It always amuses me because I rarely order those kinds of beverages. My go-to is usually water or an Americano. I often feel that a sugary, creamy drink prevents me from fully enjoying the flavors of the meal—but maybe that’s just a “me” problem! 😬

That being said, I do enjoy a milkshake occasionally when I need a little pick-me-up. This Carrot and Date Milkshake was born on one of those days. It’s actually quite wholesome when you look at the ingredients: milk, carrots, dates, and almonds. I even added Sabja seeds to make it a bit more nutritious!

Whether you’re a drinks person or not, this is a delicious and easy recipe worth trying.

Ingredients

  • 250-275 gms Carrots (cubed)
  • 15 small Dates
  • 20 Blanched almonds
  • 1/2 cup Hot milk
  • 2 cups Chilled milk
  • 1/4 cup Sabja (Basil) seeds (optional)

Instructions

  • Soak sabja seeds in 1.5 cups water for 15 mins. Soak dates and almonds in hot milk for 15-20 mins.
  • Pressure cook cubed carrots in 1/2 cup water water for 4 whistles on high flame. Once the pressure drops, drain excess water, if any. Let the carrots cool completely.
  • Grind together cooled carrots, soaked dates and almonds along with the milk used for soaking.
  • Once it becomes a smooth paste add chilled milk gradually along with some ice cubes. Do a taste test and add sugar, if required.
  • Add soaked sabja seeds (used only 3/4th qty of soaked sabja) to this and mix well. Top with some sliced nuts as garnish and serve chilled

Notes

Though I've mentioned sabja seeds as optional, I recommend adding them especially if you are living in a hot and humid place. It helps to cool down the body as well as digestion.
You can use Almond/Oat milk instead of regular milk to make this.
Serves 10 small-medium size glass.
