Pulled Chicken Sandwich

Ingredients

  • 900 gms Chicken breast (boneless)
  • 2 medium Onion (chopped)
  • 1 tbsp Chopped garlic
  • 1 1/3 cups Barbecue sauce (refer notes)
  • 1/2 cup Apple cider vinegar (you can use regular vinegar also)
  • 1 tbsp Chilli sauce
  • 6-8 Burger buns
  • 6-8 Cheese slice (I used Cheddar cheese slice, refer notes)

Instructions

  • Wash and clean the chicken breasts. I slit each chicken breasts lengthwise. Season the chicken with salt and pepper and place in a heavy pot with the onion, garlic and just enough water to cover (about 1-1/2 cups). Add the barbecue sauce, vinegar and chilli sauce and bring to a boil.
  • Reduce the heat and simmer until the chicken is cooked through, about 15 minutes. Remove the chicken from the sauce and shred with two forks.
  • Boil the sauce, skimming occasionally, until reduced by half, about 15 minutes. Season with salt and pepper. Add the shredded chicken and heat through.
  • Assembling the sandwich:
  • I buttered the sliced bun and toasted on stove top. Placed the cheese slice on the bottom half of the toasted bun, placed some lettuce leaves (optional), put the shredded chicken and topped it with grated mozarella or monterey jack cheese and some pickled gerkins (optional). Cover with the top half of toasted bun.

Notes

You can use ready made or homemade BBQ sauce.I used homemade BBQ sauce, made with this recipe . If you are making the homemade BBQ sauce, based on the above recipe, may be you can cut down the qty of sugar. I found it a bit too sweet, so I kept on adding more chilli powder. Also in the above recipe, I used Kashmiri chilli powder instead of Paprika and Apple Cider Vinegar instead of Red wine vinegar.
You can customise the sandwich to suit your requirements. If you are planning to serve it as a starter, use mini burger buns, otherwise use std size burger buns.
You can customise the burger by adding the toppings you like. As you can see in the picture, I used bacon also as topping. But it tastes good with just the chicken filling and cheese also.
