Simple Pancake

Ingredients

  • 1.5 cups Plain Flour
  • 1 Egg
  • 1/2 cup Milk
  • 2 tbsp Sugar
  • Salt
  • Water
  • 2 cups Grated Coconut
  • 6 tbsp Sugar
  • 3 Cardamom (crushed)
  • 2 tbsp Ghee

Instructions

  • Mix together plain flour, egg, milk, sugar, salt, water and make a thin batter. Heat a pan/thava and pour the batter and spread it. Cook for a few minutes & turn the side. Prepare pancakes like this with the remaining batter.
  • For the Filling
  • Heat ghee in a pan and add the coconut and crushed cardamom. Add the sugar & mix well. Cook the mixture till it becomes soft and juicy. Put the filling in the prepared pancakes and roll it. Serve hot with honey.

    The pancakes looks very simple to prepare. I usually just mix  coconut & sugar.What u have shown is a different method  & will be really yummy.

    I remmeber these pancakes it takes me to my hostel days in engineering college.! I still remember the girls rushing to the Canteen to grab their LOVE LETTERS! thats what we used to call these pancakes..! wow

      Good to know that this recipe brought you memories of good old days :) I’ve also heard the name love letters for this snack. May be because this snack has a sweet filling, just like the love letters with sweet words ;)

      Its a fav tea time snack at my place too. I’ve heard some people calling this madakkusan, but as you said I’m also clueless why its called like that :)

  5. thanks maria posting all these recipes.it is very helpful for people like me( new cooks).i wanted to ask u about the coconut mix.when i made it it became very hard not soft.any tips?? thanks again.
    (.i am from cochin too.currently in u.s.)

      About the coconut mix, it tends to become hard if you cook it for a long time. You can remove it from fire when the sugar starts melting. Hope this helps…
