Heat oil in a wide pan. Add chopped onion and crushed garlic. Cook till it begins to brown, no need to brown it. Add julienned carrot and green peas. Cook till it's done. Add chicken pieces, salt and pepper. Mix well. Add cooked rice and gently mix everything. Add butter and chopped coriander leaves. Mix well. Serve hot

I've used Basmati rice for this recipe. But you can use any regular rice which you use for your daily cooking like Sona Masuri. I used grilled chicken in this recipe. You can use boiled or grilled or roasted chicken. You can also use leftover chicken from any curry. You can also sub chicken with mutton/beef/pork/prawns. In this particular recipe I didnt use any seasoning other than salt and pepper. If you are using plain boiled chicken, you can add some curry/meat/chicken masala or any seasoning powder you like. You can also add a scrambled egg to make it more wholesome. You can add any veggies of your choice like mushroom, spinach, broccoli, cauliflower, capsicum, celery, spring onion etc;
