Brioche Bread Pudding With Caramel Sauce
This Brioche Bread Pudding is made with buttery brioche bread soaked in a rich vanilla custard and baked until golden. Topped with a silky homemade caramel sauce, it's a warm, indulgent dessert that transforms leftover brioche into something truly special — perfect for festive gatherings or a cosy weekend treat.

Ingredients
- 4 cups Brioche bread cubes refer notes for substitution
- 1.25 cups Milk
- 2 Eggs
- 1/2 tsp Vanilla extract
- 1/8 tsp Cinnamon powder
- A pinch of Grated nutmeg optional
- 60 gms Unsalted butter melted
- 1/3 cup Sugar
Instructions
- Preheat the oven at 180 C for 10 mins, before baking.
- Drizzle the melted butter over the bread cubes.
- Whisk together eggs, sugar, vanilla, cinnamon powder & nutmeg. Once it’s whisked well, add milk and whisk.
- Pour it over butter coated bread cubes, making sure to evenly coat each piece.
- Transfer this to a greased baking tray. I used a 9 inch round ceramic baking tray. Bake in the preheated oven at 180 C, for 30-40 mins (refer notes).
- The pudding is ready when the top of the pudding springs back after lightly touching it with a fork.
Notes
You can use any milk based bread instead of brioche to make this pudding. You can also use croissants to make the same.
Its better to tear the bread into big cubes, otherwise it will be crumbled up.
You can add 1/3 - 1/2 cup of raisins, chocolate chips or any nuts of your choice as well to the pudding. Add it along with the custard to the bread pieces.
The baking time may vary depending on the type of the oven you use. Start checking after 25 mins and adjust the baking time accordingly.
To make a quick buttery brown sugar sauce: Melt 3 tbsps of salted butter in a small saucepan. Let the butter brown on simmer. Add in 1 tbsp of brown sugar and 1-2 tbsps of milk. Whisk to combine and simmer for 1-2 mins. Remove from heat and add 1/4 tsp of vanilla extract. You can drizzle it over the bread pudding while serving.
You can store the leftovers, if any, in fridge for 2 days. Reheat in MW or air fryer before serving.
