For the streusel
1/2cupSugar
1/4cupPlain flour
1/2tspCinnamon )(refer notes)
2tbspButter 28 gms, melted
Instructions
Preheat oven to 180 C, 10 mins before baking.
Mix together the streusel ingredients and keep aside.
Combine flour, sugar, baking powder, salt, and cinnamon. Whisk together the egg, milk, and melted butter. Pour the wet ingredients over the dry, and stir just until combined.
Fold in the apples. Pour into lined muffin cups and sprinkle the streusel topping over each muffin.
Bake in the preheated oven for 20-25 mins.
Notes
I used only 1 3/4 tsp baking powder for the above qty. I used same qty of light brown sugar, instead of white sugar, for the cake batter. I used only 1/4 tsp cinnamon in streusel topping.You will get 12 muffins from the above qty.
