Begin by combining the dates, cashew nuts and raisins in your food processor. Process the ingredients until the nuts are roughly chopped.
Then add the cocoa powder and vanilla. Process until your ingredients form a sticky ball.
To make it into bars/ squares: put the ball on baking paper and cover with another baking paper and roll it out. cover the rolled out dough with cling film and roll once gain. refrigerate. Cut into squares or bars.
Or you can shape the sticky ball into small balls for quick bite-size energy balls and refrigerate.
The original recipe uses Medjool dates. If you are using Medjool dates, you'll need 4-5 of them and if you are using regular dates, you'll need 10-11 of them. You can store this in fridge for 4-5 days.If you want you can wrap each bar separately in cling film to have the energy bar on go.If you don't like the taste of cocoa & vanilla, you can skip it. Also, if you like different nuts, try adding that. Also, you can add ingredients like desiccated coconut or sugar free nuts butter to give diff flavors.
