Carrot & Beans Thoran

Thoran – veg stir fry with coconut, is an integral part of everyday Kerala lunch. Thoran is made with almost any vegetable, here I'm sharing a very basic thoran recipe with easily available vegetables like carrot & beans.

Carrot & Beans Thoran

Ingredients

  • 250 gms each Carrot & beans
  • 1/2 cup Grated coconut
  • 4 Green chilly (slit lengthwise)
  • 5 Small onion / Pearl onion
  • 1 tsp Chopped Garlic
  • 1/4 tsp Turmeric powder
  • A small pinch Jeera ( optional)
  • Salt
  • 1/2 tsp Mustard
  • Curry leaves
  • Coconut oil

Instructions

  • Cut the beans finely and grate the carrots. Combine coconut,green chilly, small onion, garlic, turmeric powder and jeera. Mix it well using your hands. Heat oil in a pan and splutter mustard seeds. Add curry leaves & the coconut mixture. Fry it for 2-3 minutes (do not make the coconut brown). Add the sliced beans, grated carrots & salt. Combine everything well. Sprinkle around 1 tbsp water & cover and cook it on low flame till its done. This should be ready in 5-10 mins, approx.

Notes

Give it a stir once in between, otherwise it may stick to the bottom. You can increase the amount of coconut if you like.

  1. you mention combine coconut and in the next line you mention add oil mustard curry leaves and add coconut. Do you want to split coconut into two sets?

    • Hi,

      I have a suggestion to improve this. Its always better to smear the veggies with salt (and turmeric powder, if required) and steam them before frying them for about 5-10 minutes. That way, the veggies loose very little of freshness, color, flavor, crispiness and nutritional value. You will get them medium cooked in steam in 5 minutes or so. Then, depending on personal preferences, they can be fried with whatever ingredients, consistency and depth, as desired. It takes less time too, steam is an extremely efficient cooking medium, trust me. Do let me know if you find this helpful. In fact, this can be applied to almost all kinds of “malayali veg thoorans” ! Please do not try cabbage and other similar light cooked thoorans in this fashion. Those are better lightly fried directly, without steaming.
