Ingredients

  • 1/2 ltr Milk
  • 4 Eggs
  • 1 tin of 395 gms Condensed milk
  • 2 tsp Corn flour
  • 1 tsp Vanilla essence
  • 2 tbsp Sugar

Instructions

  • For Pudding
  • Beat condensed milk & eggs well. Add milk to this mixture & beat well. Take a little of this mixture & add to corn flour & make a paste. Add the corn flour paste & vanilla essence to the milk mix. Mix well.
  • For Caramel
  • Spread 2 tbsp of sugar in the caramelising dish. Add some water & caramelise it. When it becomes golden brown colour, take it off from stove. Let the caramel set. Once it is set pour the pudding mix over this. Cover the dish with aluminium foil.
  • Pour 2 glasses of water in pressure cooker. Keep the pudding dish in that & cook for 10 minutes on slow fire after putting the weight. Turn off the gas. Keep the dish in pressure cooker for another 30 – 45 minutes. Once the dish is cooled keep in fridge for 3- 4 hrs.

  • maria, pls advise the serving quantity for the above recipe using the said qty of ingredients.. and also whether the same can be prepared in Oven.

    I think you can serve 6-8 people with the above meaurements. It can be prepared in oven also. You need to bake at 370 F for 40 minutes. Emi tried this & came out well.

  • hi maria, nice pic:) one question, i too have posted a caramel pudding recipe in my blog, but mine always has some eggy smell after its prepared. It doesnt go off even when its taken from refrigerator. Any tips on that?

  • Roopa, if you are getting an eggy smell, try adding some cinnamon powder or nutmeg powder, just before cooking the pudding. It should solve the problem. Hope this tip helps you :)

    • Dear Maria,

      I usually add the vanilla essence to the egg while beating it (my momz method) — this clears the eggy smell.

      Also, sometimes we add 1/2 tsp of finely chopped ginger just before the sugar caramelises… the end result is something unique.

      I wonder if this tip will help.

  • hi ive always wanted to make a caramel pudding but also a creme brule have you got any recepies for that also please have you got a simple but delcious recipie for a korma curry with a side dish please i cant eat anything hotter than a korma but all the ones ive tried are always plain and boring thanx :)

  • hi…i am new to ur site…but i think its fab…kudos…i have started taking an active interest in cooking though i am a known foodie…i just wanted to say i tried out this pudding with just one ingredient diff ie i added custard pwdr instead of cornflour ….idea was my mom-i-laws..tasted really good …..keep the recipes flowing so that peoplel like me feel like trying…cheerio:)

    What kind of dish do we use as caramelising dish. and in the cooker we have to use the same dish too, right? And wats the amount of water you should add to sugar while caramelising it?

      I use an aluminium tin for caramelizing the dish and I normally use the same dish in the cooker. I add around 1 tbsp of water while caramelizing.

    All your recipes turn out excellent, but this one turned out excellent only when it was steamed for 45 minutes without puting weight.when i put weight as u said and i opened after 45 minutes, the pudding was in liquid form itself,why?

      I am sorry, I dont know the reason why it didnt cook properly :( Usually it comes out well for me.

      Anyways, I can suggest you another method for steaming using appachembu. Steam the pudding using appachembu in high flame for 17-20 minutes. Switch off the gas and keep closed for another 5 more minutes. After 5 minutes you can open it.

      Hope the pudding comes out well using this method.

  • I tried your Caramel pudding yesterday. It is very simple to prepare and also the ingredients are easily available at home.
    The pudding came out very good and everybody at home liked it.I can hear my husband asking to serve him some , right now. :) Thanks a lot for the recipe. This is my first pudding and it came out really well.

  • hi maria ,custard pudding cameout superb. usually i add bread instead of cornflour and more eggs.i admit urs is better i added custard powder as it gives better flavour.my daughter and kids r comming for dinner.so i am going to prepare it again.oh i forgot.i prepared it in microwave and it took 15 mts totally..today the quantity is more .so i,llry half in micro and half in steam.to no the difference

  • hi maria i am only too glad to share micro cooking with u.the time setting is according to your pudding proportion.
    caramilising–take a micro dish( round ONE) spread the suger evenly and sprinkle some water all over.high micro for 4 mts..for light caramel 3 mts and for dark 4 mts..(i prefer 4 mts).then pour the pudding mixture in to it and H micro fo12 mts and let it stand therefor sometime.if u want it ti bit more hard go for 15 mts.i prefer 12 mts. .the pudding is ready.

    when u take out the dish aftercaramilising
    you may find dark caramel here and there inbetween..dont caramilise once more thinking it is undone.it mayget too dark or burned.once i made that mistake.and the caramel was bitter.wen the pudding isready u will find that caramel has been spread allover evenly.

    I have read many of your recipes and also enjoyed making a few of ur non veg ones– however this is the first time i am going to try this caramel custard.Please tell me when do we unmould the pudding ? before we keep it in the fridge or after it has cooled in the fridge?

      Thanks for your sweet & encouraging words :).

      You can unmould the pudding once it becomes same as room temperature ie before keeping in the refrigerator or after keeping in the fridge, just before serving. Hope I haven’t confused you :)

      Thank you :)

      You can use sugar instead of condensed milk. I think around 3/4 – 1 cup of sugar will do. I have always made this with the condensed milk, so am not very sure about the qty of sugar.

      Condensed milk gives a more creamier texture to the pudding.

      Was the custard cooked well? I think if it wasn’t cooked completely, it might not set. Also did you add the cornflour? It helps in binding the custard together.

        It wasn’t cooked well for sure though I kept it in the cooker for the mentioned time…Must have needed more time I guess…Thanks anyways..

          Try keeping it for a longer time. I usually use a 8 inch round tin, for the above qty, to make the pudding. If you are using a smaller tin, the cooking time will differ.

      It’s better to cover the tin tightly while cooking. If you have cling film with you, try covering it tightly over the tin.

    I came across your through ‘show me the curry’. I am yet to try any of your recipes but I bet they are awesome going by the comments and not to mention, the pictures. I thought I’ll start with the simple choc cake (i’ve a serious case of sweet tooth) but couldn’t resist the caramel pudding. It was my amma’s standard quick fix dessert and totally scrumptious! So, I was glad to see it here. However, I was wondering if i could make it in the oven, coz the cooker I have is not large enough to hold my baking pan. Also, I don’t have a traditional pudding bowl. So, will any glass, non stick baking suffice? Thanks :)

      Welcome to MariasMenu :)

      You can bake the pudding in oven too and yes you can use normal baking tin instead of a pudding dish. You can use a non stick baking pan, aluminium baking pan etc;

        Thanks for the prompt reply :) I have a couple more questions. I never had any interest in cooking until now so I’ve a zillion doubts for every recipe I see! Some of the recipes mentioned ‘melting the butter’. Does that mean simply melt it on the microwave or stove top? Coz again, I don’t have a double boiler.
        Now this is a totally non-cooking related Q. Your face looks vaguely familiar. Are you by any chance from st.teresa’s cllg, EKm?

          Its ok to have doubts. I will try to answer whatever I know :)

          Melting butter is just melting it on stove top or MW, as you have said. You dont need a double boiler for that.

  • Hi Maria. I have tried this recipe 3-4 times. But i am facing a small problem here. After cooking the mix in the cooker, I see that the caramel in the bottom becomes watery and even after keeping in the fridge, it does not get set. I would prefer the entire thing- both the caramel and the pudding to be set nicely.. any idea why this happens? Thanks.

      I’m not very sure about why it happens like that. However try making the caramel in a bit more thicker consistency.

      I assume your pudding is set, if not try cooking it a bit longer than the usual time.

      I havent baked this pudding yet but one of my friends baked it. She suggested baking the pudding at 180 C/ 370 F for around 40 mins.

    Can v cook custard in appachembu? all my custard mix went out frm my custard dish wen i tried it in pressurcooker.

      Yes, you can do the same in appachembu also.

      For the above qty, in appachembu, I usually cook for 18 mins on high flame in largest burner & keep it closed for 5 mins after cooking. However the cooking time can vary depending on the pan size, burner etc;

    I made the custard and its getting ready in my oven. For how long does it keep well in the refrigerator? should i keep it in the freezer ?

      You can keep it in the fridge for 2-3 days. You dont have to keep it in the freezer. It’s ideal to keep it in the chill tray.

      I’ve used aluminium tin for making this pudding. You can use steel vessel if you are steaming it in appachembu. I havent used steel vessel in pressure cooker, so I’m not sure about it.

    The custard looks great. My cooker is too small and i cant keep any vessels inside and cook is there an alternative for the steaming perhaps in an idly cooker will that work???

    Could you please explain the reason for the addition of cornflour? I would like to know since its the first time I come across a caramel custard recipe that calls for its use.

    Also, it would be a good idea to edit the ingredients to show the amount of condensed milk as 1 tin of 400gm . This is because condensed milk, in the market, comes in different quantities – 200g, 400g and so on. I have also observed how many readers question the amount of condensed milk to use when the recipe only says ‘1 tin’ !

      About adding cornflour, it helps in binding the pudding and also holding the shape while inverting the pudding to a serving dish. Thanks for the suggestion about condensed milk tin, I’ve updated the recipe with the same.

  • Hello my dear Maria, I tried your caramel custard. I followed the steps ditto. But my sugar didnot caramelize, the mistake I guess I made is that I poured water as I saw the sugar evaporate and didn’t allow it to turn brown, so pls comment on that. Also is there a way to make it without egg, as it carries a stink  Thank you once again u rock!

    • Hi Rhea,

      The caramel didnt work out because of the reason you’ve mentioned. After the sugar turns liquidy, the bubbles will come and then it starts turning brown and after sometime, the bubbles settle down. Add water only at this stage.

      I havent tried eggless version, so I dont know. However try making it with eggs which has a very light colour yolks and also you can add grated nutmeg or cinnamon (1/2 tsp) to reduce the eggy smell.

Just wanted to clarify a few things – have you cooked the pudding in pressure cooker? I’ve mentioned the cooking time of 10 mins, for pressure cooker. Also, if you’ve used cooker, the time is given after you’ve put the weight on (usually the weight is put after the steam starts coming). Is that the case?
