Aviyal / Avial (Recipe For Onam Sadya)

Ingredients

  • 3 cups Assorted veggies (cut lengthwise (refer notes))
  • 1.5 cups Water
  • 1/4 tsp Turmeric powder
  • 1/4 tsp Pepper powder
  • 1/2 cup Grated Coconut
  • 2-3 Green chilly
  • A pinch Jeera
  • 1/2 - 1 tbsp Water
  • 1/4 cup Yogurt (whisked)
  • 1 tsp Coconut oil
  • Salt
  • Curry leaves

Instructions

  • Grind together pepper powder, coconut, green chilly, jeera and water (1/2 - 1tbsp) into a thick paste. Cook the veggies with turmeric powder, water (1.5 cups) and salt.
  • When the veggies are 3/4th cooked, add the ground paste. Mix well. Cover and cook till the veggies are done and the raw taste of coconut paste is gone.
  • Add yogurt and mix well. Cook for 1-2 minutes more and just before removing from the gas, add the coconut oil and curry leaves. Serve hot with rice.

Notes

I used Drumstick, golden cucumber, Pumpkin, carrot & raw plantain (pachakaya). The above qty serves around 4 people.

      I got the bowl from India and I’ve given the details of the veggies I used in the notes. Though the traditional aviyal recipe calls for a particular set of veggies, i usually make it with the veggies I like :)

      If the curd isnt too much sour, reduce the qty and use. Otherwise you might have to make it with another fresh batch of curd.

      Thanks for trying the recipe. I guess there are different styles of making aviyal in different parts of Kerala.

      Some people add raw mango instead of yogurt, so there are variations like that. May be you can try that.

    please try this Avial and let me know.
    I made it in Microwave with Pachmanga as u suggested.

    Please try.

    First i put Yam with a spoon of coconut oil for 5 mnts in oven .(as the yam in Blore take a lot of time to cook).
    Then washed vegetables was put along with yam with a pinch of turmeric and another spoon of Oil for 10 mnts.(Manga also)
    Then coconut,jeera,Green chilli, Chuvannulli was made to a paste and added to the cooked veggies.Kept it again for 2 mnts so that cocomut get cooked.
    Then took it out of oven poured some coconut oil and Curry leaves and kept it closed.
    Please add salt as required.
    It came out very well.
