Kerala Style Pepper Chicken

Here is the pepper chicken recipe, finally! I've been getting requests for this recipe for a long time. Though I came across many recipes, I didn't find any of it interesting to give it a try. I'm glad to say, the search ends here! Last time when I went to Kerala for holidays, I happened to see a cooking show featuring this recipe. It was a sunday and I was just lazying around, lying down on the sofa, surfing the channels. The moment I heard the word ‘pepper chicken' on TV, I just jumped out of the sofa, got hold of a piece of paper that I could find and started writing down.

Sometime ago, when I was planning to cook chicken, I thought of this one and started searching for the recipe, but couldnt find. To top it, I wrote it down on a tiny piece of paper. How I wish everything had some kind of button or code attached to it, so that we can give it a ring just like the mobile phone & find it instantly! Dont you think so? Anyways… a few days later, when I opened my recipe diary, some bits of paper fell down. Tada! It was the pepper chicken recipe…

Though I started with the recipe on paper, I ended up with something totally different. It wasn't intentional, but it happened just like that. Anyways, I'm happy with the end result. I loved the colour, the flavour… Let me tell you, it  turned out quite spicy! You will get the sharp taste of pepper in the first mouthful itself. So please feel free to adjust the spice level to suit your requirements. Since this is a dry preparation, you can use this as a starter also. Btw, I somehow got the feel of a ‘thattukada' (street food) food from this, may be because of the spiciness and colour of the dish.

Marinate the cleaned chicken pieces with salt, pepper powder & lemon juice…

Crush the whole black pepper & keep it aside…

Add 1/4 cup water to the masala…

Pepper Chicken ( Kurumulaku Chicken)

Ingredients

  • 400-450 gms Chicken (cut into medium size pieces)

For Marination

  • 1/4 tsp Pepper powder
  • 1 tsp Lemon juice
  • Salt

For Masala

  • 2 med – large Onion (sliced)
  • 2 – 2.5 tsp Crushed Ginger & garlic (each)
  • 1-2 Green chilli (slit lengthwise)
  • 1 1/4 tsp Whole Black pepper
  • 1/2 tsp Garam masala
  • 1/4 tsp Fennel powder
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Chicken/meat masala (optional)
  • 1 tsp Soya sauce
  • 1 tsp Tomato sauce
  • Curry leaves
  • Coconut oil
  • Salt

Instructions

  • Marinate the cleaned chicken pieces with salt, pepper powder & lemon juice. Crush the whole black pepper (do not powder).
  • Heat oil in a pan & add sliced onion. Let it brown. Add grated/crushed ginger and garlic, green chilli and curry leaves. Let it cook till the raw smell goes, around 3-4 mins. Add crushed pepper, turmeric powder, garam masala, fennel powder and chicken/meat masala (if using). Mix well. Cook for another 2-3 mins. Add soya and tomato sauce/ketchup. Mix well.
  • Add 1/4 cup water and salt and mix well. Add marinated chicken pieces. Combine everything well and make sure that chicken pieces are coated with masala. When chicken starts changing the color add 1/2 cup water & mix well.
  • Let it boil. Reduce flame and cover and cook it till the chicken is done. Check in between, give a stir and add more water only if required. Once the chicken is done, remove the lid, add some curry leaves and continue cooking for another 5-7 mins on low flame, just to roast it a little more. Remove from fire. The dish will get a darker shade once it rests.
  • Garnish with onion & lemon/lime.

Notes

I strongly recommend using crushed pepper in the masala for the flavour and taste. Also if you are looking for that typical Kerala style preparation, use coconut oil. Be careful while adding salt, since the chicken is already marinated with salt and salt comes from soya sauce too. I suggest you prepare this dish in advance, so it helps the flavour to settle in.

      Though I make garam masala at home, I dont have any specific proportions. I use cardamom, cinnamon, cloves, black pepper and fennel seeds to make garam masala.

    1. Are you using whole cut up chicken for this?
    2. Can the recipe easily be doubled/tripled or should I reduce the amount of spices if I double/triple the chicken?
    3. When you suggest to make in advance, do you suggest I make a day in advance and then heat up in the oven before I serve?

      1. I used fresh chicken cut into medium size pieces for this recipe.
      2. If you are doubling the recipe, you can double the amount of spices also
      3. Yes you can make it a day in advance and I generally heat it on stove top.

  14. I have made this several times now, and it is amazing every time… but I’ve never ever been able to get it anywhere near as dry as you seem to get it, not even close, I generally serve it with the remaining thick gravy from the pan…

    so what am I doing wrong? this probably sounds dumb, but am I meant to let the water boil off completely before I cover it. or just let it come to a boil and then cover it as per the instructions?

    In any case it is still delicious, and the heat is just right (for me.. my wife has a pretty hefty serve of yoghurt with it). Thanks!

      Good to know that you’ve tried this recipe several times, thank you :)

      Towards the end, remove the lid and cook the chicken on low-medium flame,stirring in between, so that the water dries out completely. Make sure you have a close watch on the dish, otherwise the chicken tends to burn .

    Tried your pepper chicken today, awesome! I couldn’t get it as dry as seen with your pics, because wifey wanted the dish to be bit watery, so that our 8 years old terror could have her chapatis for lunch.

    Lip smacking, finger licking good. never in my life have i thought that i will be entering a kitchen, leave aside writing comments on a food blog. maybe it was due to my professional arrogance of  being a helicopter pilot. anyways, never had to cook anything in my life as my wife and mom are both cook amazingly well. since my wife was  busy with her exams and i was tired of eating take away food, i decided to take matters in my hand and entering the kitchen. the world was saved when my wife let out the secret of her success in kitchen..a blog called ‘maria’s menu. the success i achieved has even made me bold enough to try out the plum cake recipe and it came out well too. the fact is that i can be seen in the kitchen more than my wife nowadays.

      I use broiler chicken mostly and it doesnt take much time to cook. So I dont see any need for using pressure cooker, that’s why :)

    Thank u so much for posting this recipe. However i tried preparing this as per ur instructions but after i added the chicken it started oozing out water and it turned out to be a gravy. How do i avoid this next time. Please suggest.

      Sorry to hear that it didnt come out perfect! I think its best to add water to the chicken after waiting for some time. Because some chicken has more water/fat content. In that case, its better not to add additional water. Hope this helps…

    This is first time I am putting in my comments though I have tried a number of your recipes before like caramel custard, cutlets – chicken, fish and meat, beef fry, red fish curry and many more and needless to say all of them have come out pretty good.
    Today I was at a lost about what to prepare and thought I would give your chilly chicken recipe a try and opened up your site and saw the pepper chicken recipe. I am such a huge fan of pepper chicken that i thought I would give this one a try, and it came out really well, a little on the spicy side but it was still delicious. I have tried pepper chicken once or twice before with other recipes but your recipe is by far the best.
    I am a huge fan of your site.

    I tried out the Pepper chicken recipe yesterday and to be honest all in my family liked it.  Only variation I did is I added 1/2 tsp of coriander pwdr instead of meat masala.  It was very delicious !  Thank you so much for all your wonderful recipes.  I’ve recommended this site to many of my friends and cousins.

        We have a Yahoo forum where guys who studied in our school meet. I had posted a link to this recipe in the forum. One of the members too tried it and gave the opinion that even    though the dish was quite spicy and tasty, it did not have the expected “peppery” taste (that’s true). Another member, a lady settled in Australia posted a recipe. I tried it yesterday and found that it was superb. The recipe is as follows: 

        My mother made chicken or Pigeon pepper like this;1 pound chicken cut into 2 inch pieces1 level tbsp ground black pepper2 large onions thinly sliced and one onion chopped1 tsp ground ginger2 green chillies slit5  cloves and 1 inch cinnamon.1 Diced tomatocurry leavesoilsalt and vinegarRub chicken with the pepper, salt, ginger and vinegar and marinate for 1/2 hour.Pour oil in a thick bottom vessel and heat.Put the sliced onions and  fry till golden brown. Now fry the chicken in the oil and onions, and keep turning it over till all sides are browned( lower the heat if necessary).Put in the curry leaves and green chillies and the spices.Add the tomatoes and chopped onion and cover and cook till soft and mushy  (I added half a cup of water too).Open and keep frying till there is hardly any gravy leftSprinkle vinegar and turn off the stove.

  70. waaahh!!!! kya baath he…. no words ,, it was awsommee…  i wanted to giv ma hubby a surprise dinner and i prepared this ,, but he understood tat i was cooking smthng spl whn he rchd home frm office , coz he got smell of the curry from the gate itself … the blend of coconut oil nd pepper was incredible,,,, thhnkkz a tonn  for sharing this…
