Kerala Style Chicken Roast

All set for Easter?  This year, we are celebrating Easter at home in Kerala. This is the first time we are celebrating Easter with family after our wedding. Btw, if you are wondering how I ended up in Kerala, again so soon, that's another story. I'll tell you about it in the next post. I know you are busy now and not in a mood to listen to my stories ;) So here's a chicken dry roast recipe. I don't have step by step pics for this one.  I made it some time ago and was planning to post on some special occasion. Look's like now is the time….

Kerala Style Chicken Roast

How to make Kerala style chicken dry roast. A simple chicken recipe, slow-cooked with spices and masala. Goes well with rice, pulao & roti.

Ingredients

  • 1/2 kg Chicken (cut into medium size pieces)

For Marination

  • 1/2 tsp Red chilli powder
  • 1/2 tsp Pepper Powder
  • 1/4 tsp Turmeric powder
  • 1 tsp Grated ginger & garlic (each)
  • Salt

For Masala

  • 1 cup Pearl onion (sliced (measured before slicing))
  • 4 medium Onion (sliced finely)
  • 1/2 – 3/4 tbsp Grated ginger & garlic (each)
  • 1.5 tsp Red Chilli powder
  • 1/2 tsp Pepper powder
  • 1/2 – 3/4 tbsp Coriander powder
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Fennel powder
  • 1/2 tsp Garam Masala
  • 1 tsp Meat masala (I used Eastern)
  • 1 med – big Tomato (sliced)
  • 1 medium Potato (cubed (refer notes))
  • 1 cup Water
  • Salt
  • Coconut oil / ghee
  • Curry leaves

Instructions

  • Marinate the cleaned chicken pieces with ingredients listed under ‘for marination' and keep aside.
    Step 1 Chicken Dry Roast
    • Save
  • Heat oil in a pan and add sliced pearl onions. Cook till it changes color slightly.
    Step 2 Chicken Dry Roast
    • Save
  • Add finely sliced onions and cook till it turns a dark brown color.
    Step 3 Chicken Dry Roast
    • Save
  • Add grated/crushed ginger and garlic and cook till the raw smell goes, around 2-3 mins. Add all masala powders and fry till oil starts appearing around 2 mins.
    Step 4 Chicken Dry Roast
    • Save
  • Add sliced tomato, salt, curry leaves and mix well. Cook till tomato becomes soft.
    Step 5 Chicken Dry Roast
    • Save
  • Add cubed potato (refer notes) and marinated chicken pieces. Mix well. Cook for 5 mins.
    Step 6 chicken Dry Roast
    • Save
  • Add water. Let it boil. Reduce the flame and cover and cook till the chicken is done. This dish doesn't have gravy. Chicken pieces should be coated well with the masala.
    Step 7 Chicken Dry Roast
    • Save
  • Serve hot with pulao, ghee rice, fried rice etc;

Notes

I've added more onions than the usual qty for this recipe. I cooked the onions till they are caramelised and have a very dark brown colour, but make sure you dont burn them. I cooked them on low flame. If you are using a fatty chicken, reduce the qty of water for cooking accordingly. Instead of adding potato along with chicken, half boil the potato and cut them into wedges. Fry them till it turns golden brown. Garnish the dry chicken roast with fried potato wedges. Since the chicken is already marinated with salt, be careful while adding salt to the gravy.
If you are in a mood to indulge, use ghee for cooking and also use fried potatoes.

  1. Thank you, that’s a great recipe. Carmelixing the onions is a pain as it takes long even with salt, however, the end result is just awesome.

    • Thanks Arun :) Yeah, it takes a bit of time but I guess it’s worth it. Maybe next time, you can add a pinch of sugar while caramelising onion, it will speed up the process.

  3. Hi Maria. Thanks for the great post. Have couple questions. Don’t you add cocunut milk for the roast ? and why should we put potato in the roast ? will it be good ?

    • Hi,

      You are welcome! In this particular recipe, I didnt use coconut milk, but I’ve used it in a different chicken roast recipe. Also, there is no particular reason for adding potato, I just added it and we liked it :)

  5. I tried your moru katchiathu, and now tried this one. First time in my life I cook a non veg item, it came out so to say not bad only thing it took more than two hours to cook, but I am a novice, (wife is not here) ,that is why it such a long time. Thanks a lot, will try again, hopefully it will come out super. The previous dishes I tried came out lip smacking. Once again , thanks Maria.

    Your presentation is really great. Have tried Eggless Vanilla Cupcake with Chocolate Frosting form your blog. It came out really well. Soo yummy.

    Would like to try out the non veg recipes. Please let me know if the Garam Masala used in the above recipe is store bought. If not, can you please share the recipe for Garam Masala.

      Thank you so much :) Good to know that you like the eggless vanilla cupcake.

      I use homemade garam masala mostly, but the thing is I dont have a recipe as such. I just take cardamom, cinnamon, cloves, black pepper, fennel seeds and star anise. Dry roast it and powder it. I dont have any specific measurement as such. hopefully, sometime I’ll measure it out correctly and share the recipe here..

      • Thanks a lot Maria. Normally the store bought Garam Masala has coriander, cumin and nutmeg too alongwith the ones you mentioned (Melam brand). So I just wanted to know the right ingredients of it before trying out the non-veg recipes.Thank you so much.

  19. thanks maria for this wonderful recipe..i tried it out n came jus like the picture u put…generally i try my best to get dark brown (chocolate color) chicken curry..n this worked out after many attempts.:):)…can u tel me the general way to get deep brown chicken curry wat do we add to get dat?

  24. Hey Maria , I made this dish twice and my guests really loved it. After marinating the chicken with the spices, I shallow fried it in oil before proceeding to the actual cooking. Thanks for this great recipe. Best Regards,

    It is my second comment here in marias menu. Again, Not bcoz I cudnt find good recipes here, just i’m too lazy. This time we really had a Marias Menu easter. With Kallappam and Chicken Stew – both the recipes are rented from your collection. i have used this chicken stew recipe a dozen times before and everytime it was a hit. Very simple and very very tasty. Also for lunch your chicken roast was the highlight. We all loved it !!!

    Thanks very much for posting this recipe. This one really saved Easter day for us. I kind of improvised(yeah right) on the recipe because chicken was about 3 kilos. My wife told me this is the type of dish that gets served in marriage banquets and she could not stop eating. Even my daughter couldn’t stop eating ( it is not a big deal for her, but for this much spiciness she really had a go at it). It was so good even after my lunch nap, I couldn’t get it out of my head. It has been a long time I felt so confident in cooking.

    Again, thanks very much for such a delightful recipe!

    In the movie, “Marykkundoru Kunjadu”, Dileep says that “after seeing the movie he directed, he stood out of so much respect to himself”. Yeah, I kind of felt like that! :-)
