Chocolate Chip Cookies Recipe

I never knew it was so difficult to get a good recipe for chocolate chip cookies. I've tried 3, 4 recipes before this one and was not happy with the outcome. Every time I made it, Jose (my hubby dear) used to find something or the other wrong with it, mostly the texture and oh ya.. the cookie used to get burnt also :(  I had to scrape the bottom layer. I guess I haven't tried any other dish this many times to get it right.

Though I bake cake often, cookies are still new to me. I came to the conclusion that cookies dont like me :( I even thought of  giving up the idea of baking cookies, but hey wait a min…

Anyways after seeing the recipe in Cafe Cakes book by Australian Women's Weekly, I decided to try my luck again. The success of Family Chocolate Cake from one of their books, gave me the motivation  and I was not disappointed :) The texture was right and most importantly, it didn't get burnt! Cookies do like me :)

    I totally agree that is not easy to find a good cookie recipe. I tried several others but saw little success. I tried this recipe and it came out well. I did not have sufficient choco chips, so i put in loads of chunks of chocolate which worked very well as i got a lot of chocolate in every bite.

  8. Maria i tried this cookies but i became soft like cake not crispy.what to do to make this cookies crispy.my butter was too melt like cream,what form to be the butter to make cookies please reply me.i use the microwave oven in convection mode.

    • Hi Ammu,

      I’m not sure why the cookies didnt turn out crispy :( I’m not sure whether the butter played any role in it. However the butter shouldnt be melted. The butter should be at room temp, that means, if you press the butter with your finger, it should leave a mark on the butter. The butter shouldnt be runny.

      Please try again using softened butter. Hope it comes out well next time. Good luck and happy baking!

  10. Hey Maria..Wanted to write out here as so well so that your other readers can know how mind blowing these cookies are !!! I made this twice in a week and both times they came out how I wanted them to be like-  chewy centre and crisp edges !! I even had them sent to my childhood friend in the US !! They too loved it..

    Being an absolute amateur baker, was thrilled that it came out so brilliant…Goes to show how much effort you have taken to get the accuracy in the measurements before posting it here..!  Thank you sweetie and I want to request you to post a recipe for a perfect pizza dough and sauce..I am so sure yours will be perfect .. :)

      hhmm I’ve tried some pizzas before but I wasnt very happy with the results. Anyways I’ll keep searching for good recipes & hopefully I’ll be able to share it here.

    Well my sister introduced me to your site and now im in love with coz ure recipes are simple and look yumm… im very fond of baking i do the same only if time permits me and i have the required ingredients….
    what i wud like to know is if there is any substitute to adding the brown sugar…..coz i searched a lot for it in my local market where we get baking items and still didn’t get it… hope to get a substitute for it … or can i do without it>?????

  14. Hi Maria,

    I tried this recipe today & the cookies came out really good!! I’m new to baking & this is my first ever batch of cookies. I totally omitted the toasting of walnuts, as I’d forgotten to check how it needed to be done. And being in a hurry to get things moving before my toddler woke up, I just carried on without doing the toasting bit. Could you please include a note on how to toast nuts to accomodate newbies like me so we wouldn’t have to check elsewhere on the net.

      Thanks a lot for trying this recipe. I’m really happy that it came out well for you the first time itself, great :).

      Regarding toasting walnuts, just spread the walnuts in a baking sheet and bake in a preheated oven for 5-8 mins. I suggest you keep a close watch the first time, because the timing differs for diff oven.

      Alternatively, if I’m in a hurry I just toast it in a non stick pan (without any oil). Just keep tossing it for a few minutes and once you start getting that roasted smell, it should be done.

    I tried these cookies!!But the bottom layer burnt!!! Even the cinnamon cake… the inside was not cooked, but the top and bottom was burned… Do advise what to do!!

    • Hi Kavitha

      Pls try baking it at a lower temperature. Also try putting an aluminium foil first, then a layer of baking/parchment paper and then put the cookie batter. Hope this helps…

      Regarding the cake, do the same thing as putting parchment paper and also cover the cake with an aluminium foil, this prevents the cake from over browning.

    Tried these yesterday..came out really well…crisp and soft at the same time. my daughter loved it….the only problem was my cookies were too big…guess the portion of mixture I put for each cookie was more than the required …thnx for another great recipe…

  17. hey..tried this today n it came just as i wanted it..it was warm n soft and melted in my mouth..now that its cool its turned crunchy but soft still…i love it..appreciate ur patience in getting this recipe..totally worth it!

    Regarding using white sugar for cookies…I haven’t tried it yet, so am not sure about it. But I did a small search and found that, it might be ok to use white sugar though it might affect the texture and flavor of the cookie. As per the details given on some sites, brown sugar makes the cookies more moist and gives it more flavor too.

    These are great looking cookies.Can you tell me if I could substitute the sugars for the usual granulated / powdered sugar. Is it important that I need brown sugar? Thank you..
