Red Velvet Cupcakes

Hey am back :)

We had a great holiday, thanks a lot for your wishes. More about the holiday in the next post. I thought I will just drop in and say hi.

Hope you all had a wonderful Xmas with your loved ones. We celebrated Xmas in Bahrain itself with our friends.

Btw, I made this red velvet cupcake on Xmas day. Jose was asking me for a long time to make this and is there a more apt time than Xmas for these red beauties :)? I got the recipe from Shaheen's blog, “The Purple Foodie”. You can see the recipe here. I followed the recipe exactly and it sure is a keeper :). Thanks Shaheen.

  2. Hi Maria, tried the Red Velvet Cake, it was good but I could get a peculiar taste not sure whether it was the taste of the colour or the Soda. Pls advise. Image attached. Rgds

      hhmm, it can come from the colour I think. Because when I used a particular brand of colour, I had a synthetic taste. Btw, I didnt get the pics dear.. can you please email me?

    I baked a red velvet cake yesterday, just the cake.. without frosting. It was perfect.. and velvety.. and beautiful.. and RED.. :D
    Thank you for giving us all these sure hit recipes.

    I am planning to make it again for my husbands birthday, this time with the cream cheese frosting. I am planning to frost it the day before. In that case, should i keep it in fridge? If I do so, wont the cake becomes too hard? Please help as I want to make it this on wednesday evening.. Than you soo much dear.. :)

      Thanks a bunch dear :) Just for a day, I think it’s ok to keep it at room temp, unless you are living in a very humid/hot place.

        Was the cream cheese frosting too sweet?
        Also do you think if we can pipe shell borders with this frosting? This looks softer than the butter cream frosting. Thats why I asked..

        • Hi Rose,

          The frosting isnt too sweet, the cream cheese has a slight saltiness, so it will cut out the sugar to a limit. Yes it’s softer than butter cream, but if you adjust the qty of ingredients to get a stiffer consistency, you can pipe it out…

  6. I tried Red Velvet Cake.. It came out very well..Only difference is, i baked for 5 more minutes ..Its yummy to have with vanilla ice cream..hihi..I was searching for a good recipe of the same. Before i have tried twice..big failure..now m happy..  thank you Maria..

     I made a Red Velvet Cake (not a cupcake) last week from the site http://www.joyofbaking.com. I am very sad to say that it does not work out well. The cake becomes very hard. In that video, they told us to keep the cake in the fridge overnight or couple hours. I think because of that the cake gets harder. What is your opinion about keeping the cake in the fridge ? One more doubt dear, what is the difference between baking powder and baking soda ?
