Course: Baking, Desserts
Author: Maria Jose Martin

Ingredients

  • 2 Egg whites
  • 1/2 cup Sugar
  • 1/4 cup Chopped nuts
  • Icing sugar - for dusting (optional)

Instructions

  • Preheat the oven to 140 degree. Line a baking tray with greaseproof paper and keep aside. Pour the egg whites to a clean bowl. (Please note that the bowl should be completely clean and grease free, for successful whipping). Add some of the sugar to this and start whipping. After sometime add the rest of the sugar and continue to whip on high speed until stiff peaks form. If the mixture doesnt stop from the beater, when it is switched off, the batter is ready. Now slowly fold in the chopped nuts.
  • Drop one teaspoon each of batter spaced 1-1 1/2 inches apart on prepared baking tray. Bake until crisp outside and still chewy inside, it takes around 35-40 minutes of baking. Transfer sheets to a wire rack and let completely cool. Dust with icing sugar. It can be stored in an airtight container for a few days.

Notes

The baking time should be adjusted to your respective ovens. This quantity will yield 12 - 15 meringues of medium size.

  • Hi Maria :)

Check this picture out..  yes its Meringue roses :)

I could not stop myself from trying out the new rose petal icing tip I picked up yesterday and since the batter was kind of the icing texture I decided to give it a try.. It’s my first try with making roses so ya not really great but I was happy to try it out.  The Meringue batter was much softer than the usual butter cream frosting so yes I had to make the roses really fast cause it could go flat.
One thing i noticed was that the oven temperature 140 C was a bit high and I had to switch the oven off at around 20-25min cause I could see it browning already.  So next time I will try to reduce the temperature after I keep  them in the oven.. so the initial high temperature will give it the crispy crust and the lowering the temperature will let them cook inside.

Thanks again for the recipes :)
