Eggless Chocolate Cake

Shall we bake? It's been sometime since we baked right? Here is something simple to put together, if you are in a hurry. I was searching for a simple eggless chocolate cake and google took me here. This cake is really moist and I fell in love with its colour :) I think, this will be my go to recipe for an eggless chocolate cake. What I liked most about it is, it isnt very sweet, even with the frosting. Just the right amount of sweetness for me.

  1. I tried this recipe. But the upper side of the cake turned out hard and the bottom middle part was uncooked.
    Can you please suggest where am I going wrong?

    • Hi,

      From your comment, I guess either the oven temp was too high or the baking tin you used was small. If the temp is high, the top gets to cooked faster and leaving the inside uncooked. That’s the case with using smaller size tin as well. Hope this helps.

  8. Hi Maria, can I double the recipe to make a thicker cake? If yes, how long will I have to bake it in a 9inch round pan? May I know what is the reason for having hot coffee? What effect will it have on the cake if I used room temp coffee instead?

      I guess, you can do that and it may take around 45 mins to bake. About the hot coffee, honestly I dont know the reason :) I just followed the recipe…

      I’ve never tried doubling it, usually when I want a bigger qty, I make it as two batches :) However, my guess is you can use 1.5 tsp baking soad and 1 tsp baking powder for double the qty.

  11. Hello! I was looking for an eggless cake recipe for my egg-allergic cousins, and this looks perfect! I was just wondering… is 6 tbs of cocoa enough to make it really chocolatey? Sorry for the doubt, but the recipes I usually use have a lot more cocoa…

      Thanks! Btw, I’m sorry for the delayed reply. Got a bit busy during the holidays. You just need to increase the qty of icing sugar, if you are using salted butter for icing. I do hope you get to try this cake soon and like it too.

      Sorry for the delayed reply. From the pic, that you’ve shared, I guess you can treat it as cupcakes, so may be fill up-to two thirds of each bar and may be you can bake for 15-17 mins. Hope you get to try this and like it as well.

      You are welcome :) I guess 4 times of raising agents is a bit too much. Whenever I want to make a large qty, I make it in double batches. May be you can try it that way and see..

          I havent tried baking such a big cake, so I’m not sure. May be you can double the qty of raising agents, instead of increasing it 4 times. Since I havent tried it, it’s just a guesswork from my side.

    just have few doubts:

    I tried to bake the cake in 4 portions as my tin was small.

    The first time cake came out very well but it was tasted salty
    rather than being sweet.

    So I added more of sugar powdered and mix it well. But then the
    cake didn’t bake properly. It used to come up and then it was sinking from the
    middle.

    Can you please suggest why was it sinking from the center and
    why it tasted salty?

      • Thanks Maria. I had a query, generally when I try making cupcakes I get a hard crust on top. What goes wrong? What should be the baking temperature n time?

          I think, it can be because the temp is too high or it’s baked longer than it’s required.

          I bake most of my cakes and cupcakes at 175-180 C. Cupcakes are usually ready in 15 mins. However the temp n time can vary for diff ovens.

  19. Hi Maria. This recipe is almost identical to the one I use but I have the same problem every time – when I add the wet ingredients into the dry, the batter curdles. Even if I add more liquid, it remains at a very thick/stringy consistency and the cake doesn’t come out very well. I’ve tried adding the liquid one at a time – oil, yogurt and then milk – and find that when I add the yogurt is when it curdles and then there’s just no bringing it back. All my ingredients are at room temperature. Any idea why this happens? Thanks!

  21. Hi Maria..The oven temperature you mentioned here..is it for the basic oven or convection one?? If its for a basic oven how long should I keep it in
    And one more question..can I use Wheat flour instead of maida

      The temperature mentioned is for the basic oven. I’ve never tried this with wheat flour, so I’m not sure how it works. May be you can try it out and see :)

      I guess the texture of the cake will be a bit dense if you use whole wheat.

  22. Hi Maria .I got a vegan recipe off the net before I landed on this site . I used almond milk with lemon juice to curdle it ,in place of regular milk. But otherwise the other ingredients were the same.Baked twice .The cake tends to smell like vinegary :-(Stink is too strong and I am not able to tell what is causing it! Still a novice at baking.You are an experienced baker. Could you tell what might have went wrong?
    Next time I sure shall try your recipe out.

      I havent used almond milk in any cooking, so I’m not familiar with it. Also I dont know whether the combination of almond milk and vinegar brings out a strong smell.

  23. Iam using milkmaid instead of sugar as my cake dosnt bake well wid it. Kindly tell me how to get this cake darker as with milkmaid cake gets light on colour shall i use more cofee or will it make bitter..if yes then in what quantity

      I havent tried it with milkmaid, so I’m not sure. However I think by using milkmaid the colour of the cake will be affected very much.

      If you feel that sugar is not getting mixed well, try crushing it a bit and then follow the rest of the recipe.

  26. Thanks a lot for this recipe. The cake was moist and soft. I made this cake yesterday and it was a hit. I generally don’t like icing on my cake. Instead what I did, was to sprinkle a generous amount of icing sugar on it. And it tasted so yummy! Thanks Again!!!

  27. I should also mention, that I had a request for red velvet. Since I doubled the recipe I dissolved 2 tsp of instant coffee with ¼ cup of water, and mixed a ¼ cup of of vegan food colouring with the coffee.

  28. Hi Maria, I did double the recipe. I used a 10″ metal spring form pan, and I baked at 350 Celcius for an hour. I kept checking for doneness, every 10 minutes after the first ½ hour. Beautiful cake, with beautiful results.

  30. okay am totally a bad cook when it comes to baking :( :( intitally the centre got hard while the sides were perfect..now made another batter and tried..now centre is soft while the sides are still under cooked :( :( maria please come to rescue..can i cook the same batter using steamer??if so could you please instruct me…totally sad at my first cake venture :(:(

      Sorry to hear that it didnt come out well, but dont worry, you will get it right soon :)

      I havent tried steaming it, but I guess you can do it. Next time when you try in the oven, wrap a wet tea towel around the cake tin and bake (if it’s an electric oven). It will help uniform baking.

      I’ve never used sweetened cocoa for baking, so I’m not sure. However if you are using, you may need to adjust the qty of sugar. Cadbury has unsweetened cocoa powder, that’s good for baking.

    The cake turned out to be fantastic.I couldn’t believe my first baking experiment could turn so great.My husband was impressed too and there couldn’t have been a better b’day surprise !! All thanks to you and your wonderful recipe .

    Since this was my first attempt the icing is kinda shabby though :)

  37. hey maria:) :) i love the look of the cake and the simplicity of the recipe.. :) :) plan on making this for my mum’s bday, who doesnt like eggs.. i enjoy baking.. just started recently.. can i bake this without baking soda? also i prefer a hand whisk so how do i know if it is beaten enough?

      I’m not sure about leaving the baking soda part though.. You can use a whisk to make this, just whisk it till all the ingredients are well combined and you cannot see any traces of the flour..

    I have tried the above eggless chocolate cake using paper cups. When i started to bake the cupcakes 15 min later the cake mixture started to overflow. I open the oven door to check when insert the tester into the mixture, it went hollow.
    Pls advice me.

      I guess the paper cups were overfilled with the cake batter. While filling the cucpake liners, only fill upto two thirds, otherwise it wont come out well.

  44. this cake was a superhit… made it for hubby’s birthday.. since i had to take it to a friends house for a get togethr , i skipped teh icing… still it was yummy.. very very tasty… people were surprised that it was eggless.. i doubled the recipe and baked in a bundt pan and it came out perfect.. thank you maria…:)

    I baked in my convention microwave, so had to bake for 40 min instead of 30.

    The cake looks divine and i’d love to try it but just wanted to know if i can skip the coffee bit from the recipe?? Or is there a substitute for it?? Is the purpose of coffee used in the recipe for enhancing the taste and color? Or does it have anything to do with the rising of the cake while baking?

      Thank you! The coffee is used for mainly flavour and colour. You can omit it if you like. Just add 1/4 cup of plain hot water and follow the recipe.

    I went through all the comments on this recipe everybody has appreciated this but I am feeling so weird asking you this silly question as wat to do if the base of the cake has not baked properly I am using onida barbecue model with bake option I preheated the oven as per your instructions but failed miserably.

      You should bake the cake at 180 C itself. I’m not very familiar with the working of OTG. If you’ve manual, may be you can check it up to see which mode is used for baking cakes.
      No need to use electric blender, you can use whisk itself.

  56. We made this cake in an easter basket mould and decorated it. First we grated some chocolate, then I mixed strawberry and yogurt. My dad mixed some banana and yogurt and I squashed some strawberries .My mum cooked some vanilla custard, and we decorated the cake. :D

  61. Hi Maria, I’ve tried this cake many times, but in microwave mode, for 7 minutes, but it has turned out wonderful…
    Today I tried it as you instructed, in convection mode. I doubled the quantity in a tin cake, and it took 61 minutes for the knife to come out clean. Is that normal? Also, I prepared a batch of batter, and realizing it would be insufficient, hurried to make another one, then poured them one over the other in the cake tin and baked according to the instructions. Is that okay? Or should I double the quantity in one go itself?
    I haven’t been able to taste it since the batch has just come out of the oven as I write this and it is supposed to be a gift for a friend.
    Also, does essence really make a difference to the taste? I experimented with pineapple essence too but it didn’t seem to taste any different. Can I increase the quantity???
    Thanks for posting the recipe… This is the only recipe where my chocolate cake has come out pleasant to the taste buds… Our family loves this cake… Thanks again!!!

    Also, what other essence tastes good in place of vanilla? Sometimes I feel the taste of essence is not discernible, and even pineapple essence I tried once had no discernible flavor. Should I be putting more quantity of it?

    I hope the cake turns out well today. I have always loved this particular cake of yours, although I cooked it in a microwave… Thank you..

      I dont think pouring one more batter over the top should affect the cake, but since I’m no professional baker, I’m not very sure about it too..

      Try using a different brand of vanilla essence or as you said, you can increase the qty of the one you are using. You can try vanilla beans instead of essence, it gives a stronger flavour.

      Yep, you can pour ganache over the iced cake. But make sure the icing is set before pouring the ganache. Check out the moist chocolate cake with butter cream and ganache recipe on the site for the details.

  65. I tried the cake and absolutely loved it . I wanted to turn this into cupcakes. Can you tell me the baking time and also can I use whipped cream in the icing to turn it into cupcake frosting .. Also I has forgotten to add water in the icon an still it was

      Thanks a lot :) I think the baking time will be approx 15-18 mins, depending on the size of your cupcakes. Yes you can add whipping cream. I think you can fold in the whipped cream to the icing and use.

  67. Hello Maria..just want to know what does it mean by “preheat the oven at 180 C”. I am using IFB Microwave Oven in which autocook menu shows approximate time of 2-3 minutes for 200gm plum cake. Is it necessary to preheat the oven??

    If you are not a big fan of sweet cakes, this should work fine without icing also. But if you want the cake to be sweeter, you can increase the sugar by 1/4 cup more.

      I dont usually add anything extra in the recipe to make it spongy. Make sure not to over mix the recipe and also dont bake it for a longer time.

    I have tried your recipe and it was too delicious. Thanks for this wonderful recipe.

    But I faced one problem while baking cake. Middle of the cake puff up more than the sides and in the end of baking it sinks a bit in the middle. Can you please tell me why it must have happened. I have increased the quantities to 1.5 times.

      From your comment, I guess it happened because you used a smaller size tin. When you use a smaller tin, it happens that the cake tends to rise in the middle for lack of space and then it sinks after a while.

      Please try using a bigger pan next time. Hope it works..

    • Hi Payal,

      Thank you! If parchment paper/baking paper is available, that’s the best option. Also, after greasing the tin, dust it with some plain flour/cocoa and tap the tin, so that it spreads uniformly in the tin.

      I havent substituted butter for oil, but I think you can give it a try.

    I followed your recipe to the word, just doubled all the ingredients. I could not resist licking the batter that was smooth, glossy and had the perfect taste – it was lip-smacking and I was jumping with joy! I have tried so many different recipes for chocolate cake but yours is a clean winner. Thank you so much:)

    Also, I was wondering if butter could be substituted for oil. I used sunflower oil but there was a slight oil aftertaste.

      I havent substituted butter with oil for this cake, but for another chocolate cake, I’ve used oil. That one comes out well. But it’s not eggless. Please check out the moist chocolate cake for the same.

HI Maria tried out this recipe and it turned out to be delicious and easy to make.My question is can it be possible that this cake can be made without the chocolate icing?You see there are some senior members in my family who are ‘not’ too crazy about any kind of icing on a cake:))So if I have to make this cake omitting the icing sugar what are the possible changes that I will have to make to the basic cake recipe in terms of addition of extra sugar etc?????

    • Thanks Gayathri :) I think you can make it without icing too. You can use 1 cup of sugar instead of 3/4 cup to make the cake. Hope it works and your family enjoys it.

  79. Im now baking this for my mom…. It smell so goood…. I cant wait to have a slice… I omit the coffee, just used plain hot water. Hope it will taste the same, i guess just without the coffee taste hehe Will ice it with cream cheese with white chocolate.

  80. hi maria, i tried this cake using all the same ingredients, but my cake turned out very crumbly, i did a soaking of the sponge with milk and icing sugar also. Is it becoz of that ?? icing colour was not like urs , but tasted good.. can u please tell me how to rectify this problem..i bake often.

      Sorry, I didnt understand the soaking of the sponge part you did. I havent mentioned anything of that sort in the recipe.

      The cake can crumble if it is cut before it’s cooled down completely or if the batter is over mixed.

    also i would like to ask in one of my recipes for buns i used instant yeast but it didnt buble….wat could be the reasons for the dough not to rise….more over my yeast didnt bubble even after puttin it in warm milk with some sugar……thanks

      Great to know that the cake turned out well, I’m happy :)

      I think if you use instant yeast, you dont have to keep it for rising, you can just add it directly to the flour. Also if the yeast is not fresh, it wont rise…

  84. hi maria i did exactly as per ur instructions…but my cake did cook after 30 mins on top…..i hav an electric oven not the cookin range…i only kept the bottom heater on…….should i keeep the top heater also on?????thanks

      You mean the top portion didnt cook? I usually keep both the top n bottom heater on for baking cakes. Try that next time and I do hope it comes out well.

      I use an electric oven for my baking, so I’m not familiar with MW baking.

      However I’ve read somewhere that if you are using a MW with convection, it works just like the electric oven, so you can follow the same temp.

  91. Maria, Sorry to say this but the cake does not look homemade, it looks really professional :):). Nothing I bake at home ever looks so good or neat..I know it is not what you were aiming for, but I guess sometimes you cannot help perfection. The cake looks absolutely delicious and tempting. The combination of dark and light brown is so irresistable. I am going to bake it this weekend. I want to make it double layered, hopefully it will be tall enough to be sliced into two.

        Thank you for the reply:). I baked this today as I could not bake it over the weekend. And oh my god, it was so good….can you believe that we already finished the entire cake (it is 9 PM where i live and I baked it at around 12 in the noon). It was smooth, moist and unbelievably chocolaty…god, i can still smell it :D

        I did not even ice it as I ran out of time and yet it was so good. I can only imagine how good it will be with icing….though my husband does not like iced cakes much and told me he prefers it this way :)

        Thank you so much for the fantastic recipe…this is going to be my go-to recipe for chocolate cake from now on. And this is the third recipe of urs with which I have had success. Your malai kofta is almost a weekly feature in our house now :). Thank you once again and keep up the awesome work.

  95. hi…a couple of doubts…..is parchment paper the same as baking paper?and r either of these the same as greaseproof paper…where do u buy parchment paper here in bahrain?which brand?…some of the recipes u have said grease the dish and place parchment paper…some places grease the parchment paper….is tht significant?r those cupcake liners we get similar to any of the above mentioned papers??do they need greasing too?sorry to sound like a dunce….

      Is parchment same as baking paper… to be honest, I’m not sure. Here in Bahrain, you see parchment paper in shops. But back home, it’s known as baking paper, so…

      I buy Dana brand parchment paper, most of the time. I buy it from Megamart/Geant/Lulu etc;

      I usually dont grease the parchment paper. However in some cases, depending on the recipe, the cake seems to stick to the parchment, especially sponge cake. So in that case, I grease the parchment paper also. So I write it depending on the recipe.

      I think the cupcake liners are similar to the parchment paper. I dont grease the cupcake liners.
