Here is the recipe…
- 250 gms Plain Flour
- 1 tsp Baking Powder
- 250 gms Butter
- 250 gms Powdered sugar
- 4 Egg yolk
- 1/2 tsp Orange rind
- 1/4 tsp Lemon rind
- 1/4 cup Milk
- 4 Egg whites
- 1 tsp Vanilla essence
- 1 tbsp Sugar
- Preheat oven at 200 degree for 10 minutes before baking. Prepare a round shaped cake tin for baking.Beat the egg whites separately till it forms a soft peak. Add vanilla essence and sugar to this and keep it aside. Sieve all purpose flour and baking powder. Beat well the butter and powdered sugar. Add egg yolks one by one to this and mix well. Add the lemon and orange rinds. Add flour and milk alternatively to this and beat well. Add egg white mixture to this and fold in. Pour the batter to the prepared cake tin and bake at 200 degree for first 10 minutes and 180 degree for another 25 - 30 minutes.

Maria please can u tell me 250g is how many cups of maida?? and also 250 g powdered sugar=how many cups? It would be very grateful if u could add the measurements such as grams in cups anywhere in ur site…..coz i get confused whenever its mentioned in grams :(……really hope u can help me in this
For this recipe, use 2 cups of maida and 1.5 cups+ 2tbsp of powdered sugar.

Regarding the cakes not being cooked well, it can happen due to various reasons:
It can happen, if the pan size is not correct. if you are using a smaller pan size, it will take longer time for the cake to bake completely.
The temp of the oven. The temp can vary for different oven. From what you’ve written, I understand that the top of your cake gets cooked fast, so try baking at a low temp for a longer time. Alternatively, try covering the cake loosely with aluminium foil if the top tends to over brown.
Also do not open the oven for the first 25 minutes of baking, otherwise it will affect the rising of the cake.
Also try baking with another brand of flour.
These are some general tips & I hope it helps. Please do try the recipes again and let me know whether it comes out well.

i can post here one very wonderful cake recipe that can be made in microwave…..its 6 minutes chocolate-Walnut cake.. i always go for it whenever there is an emergency or whenever i want to surprise somebody….
