Chocolate Chip Muffins

Ingredients

  • 115 gms Butter / Margarine (@ room temp)
  • 70 gms Caster Sugar
  • 30 gms Dark Brown sugar
  • 2 Eggs (@ room temp)
  • 215 gms Plain Flour
  • 1 tsp Baking Powder
  • 125 ml Milk
  • 170 gms Plain Chocolate Chips

Instructions

  • Preheat the oven to 375F/190C, 10 minutes before baking. Grease 10 – 12 muffin cups or use paper cases. With an electric mixer, cream the butter until soft. Add both sugars and beat until light & fluffy. Beat in the eggs 1 at a time. Sift together the flour & baking powder, twice. Fold into the butter mixture, alternating with the milk.
  • Divide half the mixture between the muffin cups. Sprinkle several chocolate chips on top, then cover with a spoonful of the batter. To ensure even baking, half fill any empty cups with water. Bake until lightly coloured, about 25 minutes. let stand 5 minutes before turning out.

Notes

It can be stored in an air tight container @ room temperature upto 3 days.

    In this recipe, please clarify me one sentence “To ensure even baking, half fill any empty cups with water”.Do we need to put an extra cup with water half filled with water along with the cup cakes tins?

    Your suggestions would be helpful.

      If you are using a 12 hole cupcake/muffin tin for baking this recipe & if your batter is enough for making only 10 cupcakes, you have to fill the other 2 empty muffin holes with water, only half way though.

      If you have enough batter to make 12 cupcakes then you dont have to do this.
